SUSTAINABLE DINING
In conjunction with Hotel Marcel, sustainability is at our core. Our menu combines locally sourced ingredients with sustainably sourced meats and poultry, creating artfully composed dishes. The beverage program includes a collection from regional distilleries and breweries, as well as a selection of sustainable, organic, and biodynamic wines.
BLDG is open for breakfast, lunch, dinner, and drinks. We look forward to serving you!
Chef Megan Gill
Originally from Denton, TX just north of Dallas, Chef Megan shares her passion for farm to table and from scratch cooking. Tying into BLDG's mission of sustainable dining, Chef sources her menu's ingredients locally and from farmers who instill sustainability into their practice.

OUR SUSTAINABLE KITCHEN
ELECTRIC KITCHEN
• Induction cooking to avoid any need for fossil fuels
• Recirculating hood minimizes the need to use energy for conditioning make-up air
RECYCLABLE PRODUCTS
• No single-use plastics are used for events, dining, or guest room bathroom amenities
• Kitchen oil is recycled into biodiesel, a renewable fuel source
ENVIRONMENTALLY-FRIENDLY
• Environmentally friendly cleaning products
• Water-saving fixtures and defrosting methods
SUSTAINABLE FOOD & BEVERAGE OPERATIONS
• Compost all food waste from BLDG and catering
• Procure locally sourced ingredients, sustainably produced food and beverage offerings
• All bread products are made in-haus
• Excess food donations made to Haven’s Harvest, a local organization that provides meals for the community.
